Acidity isn't about sourness — it's the vibrant, lively quality that makes coffee taste "awake." Think of it like the difference between still water and sparkling. More acidity means more punch. Lighter roasts keep more acidity; darker roasts burn it off.

Bright means the coffee has a crisp, vibrant quality — like citrus or green apple. It dances on your tongue. You'll taste a pleasant snap that makes each sip feel energetic and clean. Think: Ethiopian washed, Kenyan AA.

Balanced
Balanced means the coffee has enough brightness to be interesting, but it doesn't overpower. The acidity sits comfortably beside the body and sweetness — nothing dominates. Think: Colombian, Costa Rican.

How heavy should it feel?

Body is the weight and texture of the coffee in your mouth. Light feels like tea — delicate and clean. Full feels like cream — rich and coating. Darker roasts naturally bring more body; lighter roasts stay thin and precise.

Light body means the coffee feels thin and clean on your tongue — almost like tea. Flavors are precise and easy to pick apart. You can taste individual notes without them blending together. Great for nuanced, single-origin beans.

Full body means the coffee is thick and coating — you can almost chew it. It has a heavy, luxurious mouthfeel that lingers. Flavors are deep and blended rather than separate. Think: espresso, French roast, Indonesian beans.

Floral means the coffee has delicate, perfumed aromas — like jasmine, rose, or chamomile. It's an elegant, tea-like quality found in high-altitude beans. Best at lighter roasts that don't burn these fragile notes away.

Fruity
Fruity means bright berry, stone fruit, or tropical notes — like blueberry, peach, or mango. Natural-process coffees lean this way. These notes shine at light to medium roasts; dark roasts will bury them.

Sweet
Sweet means the coffee has a natural, dessert-like quality — caramel, brown sugar, honey, or vanilla. Not sugar-added; these sugars develop during roasting. Medium roasts hit peak sweetness when caramelization kicks in.

Chocolate means rich, cocoa-like flavors — anything from dark chocolate bitterness to milk chocolate sweetness. Develops as the roast darkens. The most crowd-pleasing note in coffee.

Earthy means deep, grounded flavors — like cedar, tobacco, soil, or smoke. Savory rather than sweet. Darker roasts are where these notes live; lighter roasts won't get you there.

04 Roast · The toast

How dark is your toast?

Roast level is how long the beans are cooked. Lighter = you taste the bean (terroir, varietal, processing). Darker = you taste the roast (bold, smoky, bittersweet). Acidity drops and body rises as you go darker. This is the one knob we turn to build your perfect cup.

Light Roast
Light roast (Cinnamon / New England, ~356–401°F, at or just past first crack) — light brown, dry surface, no oils. The bean's origin character shines: floral, fruity, citrus, tea-like. Highest perceived acidity, most caffeine retained per bean.

Medium Roast
Medium roast (City / American, ~410–428°F, between first and second crack) — medium brown, still dry surface. Balance of acidity and body, caramel and nutty sweetness, chocolate notes start to emerge. The crowd-pleaser range.

Medium-Dark Roast
Medium-Dark roast (Full City / Vienna, ~437–446°F, at or into second crack) — rich brown with light oil sheen. Bittersweet chocolate, caramelized sugars, spice notes. Body gets heavier; acidity drops noticeably. Roast flavor starts to dominate over bean flavor.

Dark Roast
Dark roast (French / Italian, ~464°F+, well into second crack) — dark brown to nearly black, oily surface. Bold roast flavor, smoky and bittersweet, heavy body, low acidity. Flavor is mostly from the roast itself, not the bean. Bitter carbony notes take over at the extreme.
